The idea of filing for bankruptcy can be extremely stressful and if you are anything like me, you like to eat your feelings. When I feel stressed or overwhelmed, I like to try new dessert recipes in the kitchen. Usually, it’s a recipe that has chocolate in it.

Here is a recipe for one of my constant favorites when I want a little pick me up:

You’ll start by preheating the oven to 350 and lightly greasing a brownie pan before lining it with parchment paper.

You’ll then melt 1 cup of butter in the microwave, using a microwave safe bowl, in 20-second intervals until fully melted.

Once the butter has melted, whisk in 2 cups of granulated sugar and ¾ of a cup unsweetened cocoa powder. This should be whisked for about 30 seconds.

You will then mix in 3 eggs (brought to room temperature), 1 teaspoon of salt, and 1 tablespoon of vanilla extract.

Gently fold in 1 cup of all purpose flour and 1 ½ cups of semisweet chocolate chips (or more if you like to indulge in the chocolate like myself)

Spread that into the pan until the top is even and sprinkle with more chocolate chips.
They will have to bake for about 35-40 minutes (longer if you prefer a more cakey brownie) and you can tell when they are done by inserting a toothpick in the center.

This is one of my favorite recipes and one I constantly go back to when I need a bit of chocolate to feel better. However, I believe that all desserts can lift spirits, so if you don’t have time for this or baking is not your favorite activity, the box of brownie mix will also do the trick.
